Vacuum Sealing Basics

What is Vacuum Sealing - Vacuum packing or sealing is a process whereby the air is completely removed from a special vacuum bag or vacuum container in order to protect the food from the harmful effects of contact with oxygen which increases the speed at which foods deteriorate, thereby keeping your food fresher for up to 5 times longer while storing it naturally. The air is removed out of specially designed 5 ply food safe bags and then forms a strong seal to keep the air out - resulting in an oxygen free zone. A Vacuum Packer is particularly useful in the domestic kitchen, it can be used to seal fresh produce to increase its shelf life by up to 5 times longer than conventional storage methods - making ideal for the once a week shopper or when you have an abundance of seasonal produce you can't eat all at once.

Vacuum Sealing Raw Meat - Using a vacuum packing machine is the best way of storing your meat. By removing the oxygen, meat stays fresher and retains its flavour for longer. Vacuum sealing and freezing reduces growth of bacteria and slows down enzyme brake down. Freezer burn is something that occurs when meat is stored in a freezer for long periods, vacuum packing totally eliminates this along with moisture crystallization. Before vacuum packing meat, it is advisable to chill the meat to about 4 degrees. This makes the meat easier to cut and it also retains its shape better when being vacuum packed. Remove any sharp bones that can puncture the vac pack bag, you may need to wrap the item in a thick bag first. Remember, you can stop the vacuum process at any time to prevent the meat from being crushed.

Partial Vacuum or Seal Only - The Dometic vacuum sealer machine allows you to stop the vacuum packing process at any given point which is useful when vacuum sealing delicate produce, as the motorised pump is strong enough to crush a can when placed in the bag. It is also acts as a food sealer machine so you are able to seal vac pack bags without vacuuming, this is useful when using the cut to fit rolls of vac pack bags - as you can seal one end of the cut bag and then vacuum seal at the other end when you have placed your produce inside. This food sealer function is also handy if you have any opened bags of crisps, pasta or coffee that you want to reseal to keep them fresh.

Sous Vide - Another use for a vacuum pack machine is in Sous Vide cooking, whereby uncooked food is placed in the vacuum bag then sealed and then slowly cooked in a pan of simmering water or a specialised water bath. This produces superb results with meats such as lamb which come out so tender that it falls apart at the slightest touch and vegetables taste wonderful as no moisture is allowed to penetrate like when boiling or steaming. A cheats form of Sous Vide is 'boil in the bag' - by preparing a meal in advance and then sealing the cooked food in the vacuum food sealer bags, you can gently reheat the food in a pan of water when you are ready to eat. This is a great dinner party trick as you can spend more time with your guests and they'll never taste the difference - in fact most people comment on how flavoursome the food is as it is allowed to further marinate inside the bag.
